How to slip through the disability insurance and medicare loopholes?

My mother has been diagnosed with ALS and has been advised by her doctor to stop working and collect disability. In order to collect disability, she must quit working the day that she applies and it typically takes 6 months to process. But her and my father rely on her income and her health benefits. I don’t understand much about HIPAA and ERISA and if these apply to her (she is 63, my father is 68). Is there a non-profit organization out there that would help to financially sustain my parents while she is waiting for the disability and Medicare applications to process? What exactly is HIPAA and ERISA and are these of any interest to us? What kind of resources are out there? Where can we turn for help? ANY kind of input is greatly appreciated! I am totally out in left field here!
